Method

1. Marinate the Chicken

2. Par-Cook the Rice

Boil the soaked rice in salted water with the whole spices until it's about 70% cooked — it should still have a bite. Drain and set aside.

3. Cook the Chicken

5. Rest and Serve

Turn off the heat and let the biryani rest, covered, for 10 minutes before opening. Gently fluff and mix from bottom to top before serving with raita or a simple salad.
